Made with love and wholesome ingredients, these pudding bites are the perfect blend of sweetness and nourishment. The tender and moist texture will melt in your mouth, leaving you craving for more!

Ingredients

For the pudding bites:

  • 1/2 cup oat milk

  • 100g dates, soaked in hot water for 20 mins

  • 20g coconut sugar

  • 35g coconut oil

  • 35g sweet potato, steamed + mashed

  • 75g buckwheat flour

  • 15g tapioca flour

  • 20g rice flour

  • 1 scoop Life Health Pure Collagen Pro

  • 1/2 tsp baking powder

  • Pinch of sea salt

For the Collagen Caramel:

  • 1 scoop Life Health Pure Collagen Pro

  • 200ml coconut milk

  • 40g coconut sugar

  • 1/2 tsp sea salt

Preparation

1. Preheat oven to 175 degrees and lightly grease a medium-sized square baking tin with coconut oil.

2. Start making the caramel by adding the coconut milk and collagen to a pan. Whisk to combine.

3. Add coconut sugar and salt and put onto a high heat. Bring the boil, whisking to dissolve the sugar, then reduce the heat to a simmer for 10-15 minutes, or until you have a sticky yet still runny caramel.

4. Meanwhile, prepare brownies by placing the oat milk, dates, coconut sugar and coconut oil into a pot and bringing to the boil. Reduce the heat to a simmer for 5 minutes, whisking to dissolve sugar and mushing the dates.

5. Remove from the heat and whisk in sweet potato.

6. In a separate bowl, stir together the buckwheat flour, tapioca, rice flour, baking powder, salt and collagen.

7. Pour the wet ingredients into the dry ingredients and stir to combine.

8. Add half the pudding mixture into the baking tin then top with a generous tablespoon or two of the collagen caramel. Swirl this over the mixture then top with the remaining dough.

9. Pop into the oven and bake for 20- 25 mins or until cooked to your liking.

10. Remove from oven, allow to cool for 10 mins then remove from the brownie tin. Cut it up into bite-size pieces and place onto a serving board. Top with the remaining caramel and serve warm.


TIP: If you want to make this vegan, simply omit the collagen from the recipe and add a scoop of Life Health's Vegan Protein to the pudding dry mix only (not the caramel).
