3 egg whites
1 tsp ground espresso powder, sifted
1 scoop Life Health Collagen Powder
1 Tbsp cocoa powder, sifted
3/4 cup caster sugar
2 Tbsp icing sugar, sifted
1/2 tsp white vinegar
80g dark chocolate, melted
1. Beat the egg whites until soft peaks form.
2. Gradually add the rest of the ingredients and beat until stiff and glossy.
3. Spoon dollops of meringue mixture onto a lined baking tray and tap a few times to remove any air bubbles.
4. Pop into a 140 degree C pre-heated oven for 50 minutes.
5. Remove from oven and allow to cool completely.
6. Drizzle of dark chocolate and enjoy!
